Pemurnian Minyak Biji Kesambi (Schleichera oleosa) sebagai Bahan Baku Pembuatan Minyak Goreng

<p>Kesambi seed oil (<em>Schleichera oleosa</em>) is one of the resources that can be utilized as an alternative to substitute palm in cooking production due its lower moisture content, peroxide value, and saponification number. However, high level free fatty acid (FFA) cyanide (HCN) contents kesambi requires further purification prior commercialization. In this study, process was carried out with degumming, adsorption, neutralization techniques. The degumming conducted using phosphoric for 20 minutes. Afterwards, adsorption 25% (w/w) zeolite 14 h. subsequently performed sodium hydroxide. results showed much 32.87 g gum removed during process. picric tests verified reduced HCN contents, which indicates treated safe consume. FFA test final content each 7.23, 6.46, 6.21%, respectively. This study unfolds potential future by improving quality satisfy Indonesia National Standard.</p>
